Pan Roast Chicken Breast with Baby Spinach


Yield: 1

Ingredients

  • 1 chicken breast
  • Salt and pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • Splash white wine
  • 2 handfuls baby spinach

Directions

  1. Preheat your oven to 350°F.
  2. Preheat a heavy skillet over medium-high heat and add a splash of oil. When the oil is hot add the butter into the middle of it. Season the chicken with salt and pepper and carefully place in the pan. Sear until golden brown and delicious looking. Flip the breast and put the pan in oven to finish cooking, about 8-10 minutes.
  3. Remove the pan from the oven and place the chicken on a plate to rest. Put the pan on a burner over medium-high heat and when it's hot, pour in the wine, scraping up any brown bits from bottom of pan. Let bubble and reduce by half then add the spinach. Stir to wilt. Serve chicken with spinach and drizzle with pan juices.

Chicken and Green apple Salad


Preparation time: 10 minutes 

Yield: 2

Ingredients

Chicken and Green Apple Salad

  • 3/4 cup chopped cooked chicken
  • 1 stalk celery, thinly sliced
  • 1/2 green apple, cored and diced
  • 1/4 cup finely diced Cheddar cheese

Honey-Lemon Dressing

  • 1 tablespoon olive oil
  • 2 teaspoons lemon juice
  • 1 teaspoon runny honey
  • dried oregano (or 1/2 tsp finely chopped fresh)

Directions

Chicken and Green Apple Salad

  1. Mix ingredients together in bowl.

Honey-Lemon Dressing

  1. Mix ingredients together in small cup or dish.
  2. Toss with Chicken and Green Apple Salad.

European Commission Proposes to Ban the Addition of Sugar to Fruit Juices

Sep 24 2010 --- The Commission has adopted a proposal to amend the Fruit Juice Directive (2001/112/EC), including a move to ban the addition of sugar to fruit juices - in line with the Commission policy of reducing added sugars in products and promoting balanced diet.

The addition of sugar would be allowed only for nectars and some very specific products covered by the Directive, but the product labelling must make such addition clear. Another proposed adjustment is to include tomatoes in the list of fruits used for fruit juice production. 

Most of the proposed changes are aimed at achieving further alignment with international rules by incorporating several additional elements of Codex Alimentarius standards into EU legislation, whilst also taking account of the Code of Practice of the European Fruit Juice Association. 

The Directive lays down rules on the production, composition and labelling of fruit juices and certain similar products intended for human consumption in order to ensure their free movement with the European Union. The proposal will follow the ordinary legislative procedure in the European Parliament and the Council.

Coffee Caramel Sundaes


Ingredients

Preparation:

Coffee Caramel Sauce: In small saucepan, heat coffee until steaming; keep warm. 

In separate small saucepan, stir sugar with water over medium heat until dissolved. Boil over medium-high heat, brushing down side of pan with cold water but not stirring, until amber coloured, 5 to 6 minutes. 

Gradually pour in coffee, stirring constantly; boil vigorously until syrupy and reduced to 1/2 cup (125 mL), 5 to 7 minutes. Let cool. (Make-ahead: Refrigerate in airtight container for up to 3 days; bring to room temperature to use.) 

In bowl, combine coffee, sugar, and rum (if using). Break ladyfingers into 1/2-inch (1 cm) pieces to make about 2-1/3 cups (575 mL); remove 1/3 cup (75 mL) and set aside for garnish. Add remaining ladyfingers to coffee mixture; toss to moisten. Set aside.

In another bowl, stir ice cream with wooden spoon until softened; fold in soaked ladyfingers. (Make-ahead: Cover and freeze for up to 24 hours.)

Spoon cup (50 mL) ice cream mixture into each of eight 1-cup (250 mL) glasses. Top with about 1 tbsp (15 mL) coffee caramel sauce; top with remaining ice cream. Top with reserved ladyfingers then remaining sauce. Garnish with chocolate (if using). Makes 8 servings.
